The most beautiful countryside tours can be found in Mu Cang Chai, Hoang Su Phi and Bac Son Valley. These destinations are very off the beaten track, so it is hard to get to, so a countryside tour to these places brings you to the most authentic parts of Vietnam. Besides stunning views, you learn more about the local culture, including how minorities work on the fields and how they build the terraced rice fields.
